High Protein Banana Pancakes perfect for a weekend brunch. Made with cottage cheese, oat flour, and banana, then topped with chocolate chips and maple syrup.

1. Blend 1 cup cottage cheese, 1 egg, 1/2 cup oat flour, 1 tsp baking powder, 1/2 a banana, a dash of cinnamon, splash of vanilla extract, and pinch of salt until smooth. 2. Pour batter onto a griddle or pan heated to medium to high heat. 3. Flip pancakes once almost cooked through. Layer with chocolate chips on the cooking side. 4. Once cooked through, serve immediately. 5. Top with banana slices, more chocolate chips, and maple syrup.
