1. In a large pot, heat olive oil over medium to high heat. Add chopped onions and minced shallot. Season with salt, pepper, and smoked paprika and stir consistently for three minutes. 2. Add garlic and stir for another two minutes. 3. Sprinkle in flour and stir for two minutes or until veggies are coated. 4. Pour in chicken broth and add broccoli and shredded carrots. Season again with all seasonings. 5. Reduce to a low to medium heat and stir for 10- 12 minutes or until broccoli is softened. 6. Pour in the milk slowly and stir to prevent curdling. 7. Add in smoked Gouda (about 1/2 cup at a time) until melted through. 8. Season again with salt, pepper, smoked paprika.
